So yes, I've made many mini cheesecakes before, each of which have been super successful. This one, I didn't find as successful, but those people (Scott's coworkers) who have had it think that it's good. Okay, I guess so.

Mint Filled Brownies [MSCC]

A very quick post. I just make these yesterday - 1/3 of the recipe, had to do some math, but it turned out pretty simple. I actually ended up with 5 cupcakes and they made great brownies to eat with ice cream!

Delicious choice! It was simple to get those mini peppermint patties, now I just need to find more uses for them! Boyfriend loved them as a nice addition to our dinner together. Very minty, but the brownie was still soft and fudgy.

Cookies and Cream Cupcakes [msc]

YAY! It's my month to host.

It's been super busy month, so I apologize for not getting this up earlier. I've just been working on school and getting everything done before they're due or needed. This semester so far has been about heartbreak, meeting new people, finding a job, doing well in school, and most of school, staying healthy.

This recipe was super easy to make and although there are still a few in the house, I've been controlling myself and not eating as much. My neighbors and roommate however, have been slightly worse at controlling themselves. It's okay though, the more they eat, the less I have to.

I really enjoyed the creaminess of the cheesecake on top, but the nice crunch of the oreo at the bottom and throughout the cake. I do wish that I could make them perfect by somehow making the Oreo cover the entire bottom of the cheesecake, that would have made it even better!

Triple Citrus Cupcakes [msc]

I made these cupcakes at the beginning of the month for a friend, Mimi, who had a great birthday party. I decided to make these because she said she like light flavors and something just overall light. I thought these would have been perfect.

First I made 2/3 of the recipe. 9 eggs was just way too many. I just made it with 6 eggs - which I thought was still a lot. I used grapefruit instead of orange...well because that's what I had in the house. In addition, I decided to add a bit of citrus alcohol in it since the batter was not cupcake consistency.

After baking it, it had a muffin-like consistency therefore I just decided to add a center of lemon yogurt to it. This way, it is less muffin like, but more moist as well. I also topped it with a lime buttercream. Since I didn't have time to place it into the fridge to set up more, I just kinda scooped it on and topped it with sprinkles.

Everyone loved them which is great. Happy [way] Belated Birthday, Mimi.

Flourless Chocolate Cupcakes [msc]

I had made these cupcakes soon after the June cupcake. My friends and I were getting together for a sleepover. One of our guy friends had never painted his nails before and we decided one weekend would be nice and we would just talk and paint nails and get facials - normal sleepover stuff. This bond we had was formed over a long car talk around probably 4-5 hours. It was wow. We talked about everything. This sleepover's conversation was mostly about relationships, but I feel like most conversations I have are about relationships.

I decided that since I just got my new place, we could use that place since it will be empty. It would be great since we could just all sit there or be in our sleeping bags and just talk. So we ate some food and hung out and ate my flourless cupcakes. They were pretty good, but they never got the shells like they were on Martha's book. They were a dense little cake of chocolately goodness. The ice cream on top was wonderful as well.

Strawberry Cupcakes [msc]

It's been a while since I've really baked but that's due to the fact that my parents don't really like it when I bake at home. Therefore, I've been baking out of a box. Recently, since I came back up to Berkeley, I'm baking from scratch again. This time I was taking on Martha Stewart's Strawberry Cupcakes.

I had halved the recipe and made about 20. They were delicious, although a bit muffin like as always. In this case, I also subbed the milk for strawberry yogurt. In addition, instead of the buttercream, I decided to make some whipped cream to make it a bit lighter. They were gone very soon and it was delicious!

Tres Leches Cupcakes [msc]

These Tres Leche Cupcakes were the choice of my CNH Circle K District Board loves! They had the choice between these and the Orange Blueberry Muffin and the overwhelming vote was for the tres leche cupcakes.


Since you probably can't read that, mainly they're fighting over what I should make for them for their Officer Training Weekend which was a couple weekends ago.

Anyways, I had a bit of trouble with these cupcakes when I was trying to eat them because they were stuck to the paper liner and that made me kind of sad. Also, did anyone else find the liquid that they mixed up was like outrageously a lot? I couldn't use all of it and I threw the rest away. I also made them half the size they were supposed to be. I had made about 40 even though the recipe says 20. Regardless, they were pretty good.

Anyways, I had made them for the Officer training weekend, but they forgot to refrigerate it so it went bad =[. I think I was the only one that really got to try it. Oh well. It was pretty good!

Cream-Filled Chocolate Cupcakes [msc]

This cupcake has got to be one of the more complicated ones for me.

I didn't have marshmallow fluff and so I had to melt down marshmallows for it, but somehow, it just didn't turn out . But it go onto the cupcake and into the cupcake. I got some cool pictures of me putting the cream into the cupcake.

The cupcake was pretty good itself - I had tried it. The whole cupcake was average I suppose with the average marshmallow creme.

Sorry for the super short post, I'm super busy this week. It's like showcase week [where my friend in Taiko performed Wednesday and then another friend in a dance group is on Friday]. This weekend is also the Bake Sale!

Lemon Meringue Cupcakes [msc]

These lemon meringue cupcakes were so adorable! Everything was pretty easy to make on a busy schedule, and these were just heavenly. Everyone at the Murder Mystery Dinner seemed to really enjoy them.

I had trouble getting the 7 Minute frosting to set, but I added a little bit of powdered sugar and it set up quite nicely. In addition, I tried to use the broiler. It scares me quite a bit. I've had a few bad experiences with them. As you can see, I didn't have any better ones this time either. I burned a couple of the cupcakes, but other than that, the rest of them were perfect!

S'more Cupcakes [msc]

These S'more cupcakes were easy to make and super yummy.

Mine were a little on the dry side, but since I added extra chocolate and marshmallows, it seemed okay. I had filled mine with extra chocolate. and added marshmallows on top. Now, that I've sat down for a while, I could have filled mine with the marshmallows and chocolate and then topped them again. That would have been creative.

I realize that I always run out of time before going to parties with my friends and finish my cupcakes almost always last minute.

Last time I made s'more cupcakes, it was a completely different recipe and those who tried both had their differing opinions, but that always happens.

Coconut Cupcakes [msc]

Coconut cupcakes just were a sea of white in the Martha Stewart book. I remember looking at it and thinking where am I going to get these nice looking almond flakes from? What am I even going to bake the for? I can't just randomly make them and bring them to a meeting...or can I?

I had persuaded a friend of mine, Kevin, who I have made multiple cupcakes for, to drive me down to UC San Diego which is only about 75 or so miles from here. I know that my friends from Berkeley Circle K were going down as well.

I had made these the day of the meeting starting at about 11am and was done with everything at about 2pm. I rushed over to my friend Kevin's place and totally locked my keys into the car. Then we waited for AAA and then we got my keys out and were ready to go to San Diego!

It was pretty fun. I just hung out with my friends until the meeting and then meeting and then afterwards we got Mexican food. SO YUMMY. REAL MEXICAN FOOD.

I had made a couple of changes in this recipe. First I added a little more shredded coconut into the batter. Also, I made a coconut syrup with the leftover coconut milk (since I really had no use for it). I had put this syrup in the middle of the cupcake by cutting a hole and filling that with the syrup. Afterwards, I topped it with the seven minute frosting, but I had made the regular version and 1/6th of the recipe printed. In addition, I topped it with more shredded coconut! It was just a explosion of coconut flavor.

My friends had appreciated and most of them really enjoyed it. I hope to see my San Diego friends more!

ps. I had written this blog post much before the Haiti tragedy had happened. My thoughts are with these people. It is truly a tragedy. I wish I was able to donate as much as other bloggers, but alas, being in college prevents that.

Gingerbread Cupcakes with Cookie Cutouts [msc]

These cupcakes were so fun to make!
I had a super fun time making them, I actually didnt even get to try them because I had made 12 of them exactly with half of the recipe from the book and 8 went to this "family" dinner party, and 4 stayed at home. When I got home, there were none left! It's all good though. I know that they all enjoyed the cupcakes and the cookies on top!

As you can see, I made other cookies too and decorated them. Trees, stockings. I had made some candy canes, but decorating them was so hard, and so was the snowmen. I have no idea what to do without using like a bajillion colors...that I dont have.

I would like to thank one of my friends, Tiffany, who took these beautiful pictures of the desserts after Secret Santa. I think it was super fun. We also watched Glee! The episode of Glee was so like revealing but good though.

If you noticed, there's on with like the frosting on the bottom of the cookie..and that's cause I was going to try to stand each on the cupcake...that obviously didnt work. They ended up just staying like the way they are you see in the pictures. I also used the brown sugar cream cheese frosting from the applesauce cupcakes because I just had no time to do all of this and try to make frosting as well. I tried to add some powdered sugar to it to stiffen it up, but that didn't work. Oh well!

Anyways, I looked at the previous picture and thought - KOREAN DRAMA. Two guys fighting over one girl! Sorry, finals are draining my brain and so I'm going CRAZYYYYYY!

Applesauce-Spice Cupcakes [bonus msc]

These were made along with the Sweet Potato Cupcakes for the Kiwanis Family Thanksgiving dinner that were made to us by the Berkeley Kiwanians. All we had to do was bring appetizers and drinks, but being me, I asked for permission to bring desserts.

Turkey, Stuffing, and mac 'n cheese was my dinner. Although dinner was amazing, I think I stuffed myself with the appetizers of various things - chips, carrot sticks, etc. It was super delicious and super fun to be able to hang out with the Kiwanians. I think I spent a lot of my time playing Jenga with one of the Kiwanians. I remember during Fall Training Conference, I had gone downstairs where the advisors social was and they were playing Jenga - the intense version. Apparently they are very serious about their Jenga!

Onto these cupcakes, I feel like they were pretty good although pretty muffin like again. I feel like many of Martha Stewarts cupcakes are actually muffins in disguise. The cream cheese frosting was good, but it had not set in time for the dinner so I used it as a glaze. Perhaps they would be better if I had give sometime to rest and cool in the fridge.
