Pumpkin Cupcakes with Brown Butter Frosting


This cupcake was definitely a nice fall dessert since it had pumpkin which was super easy. It's an easy dessert - just throw everything together basically and bam, it's done!

Pumpkin Bundt Cake


HAPPY BUNDT CAKE DAY!

Pumpkin for the season.

I know it's been a while since I've posted, but I've just been so busy. Recruiting for a job, a new boyfriend, and school in general. I made this pumpkin bundt very late at night, but it's super yummy and in season. With a bit of cream cheese, it's the perfect dessert for a college student. Cake mix and some pumpkin puree and you're basically done. Perfect for a late night snack to munch on.

I hope to be baking soon enough again. Gotta feed the boyfriend somehow. ;)

Pumpkin Butterscotch Chip Cookies

These cookies were for another one of the many committee banquets I have been participating in.

I have so many extra cans of pumpkin puree when I stocked up for the "shortage" of pumpkin puree, but now I do have lots of extras. I have at least 3 cans of the huge Libby pumpkin cans at home including 2 and half here with me in Berkeley.

Although it is not the fall anymore, I thought the flavors of pumpkin could be quite interesting on a sunny spring day. So I started looking through various bookmarked and starred recipes. I had quite a few that used pumpkin puree. After I narrowed down my choices to only pumpkin choices, I had to find a recipe that only used 1 egg since that's all I had in the house. [note to self: I need more eggs] I found the perfect recipe after a couple minutes of searching.

Pumpkin Butterscotch Chip Cookies
[adapted from My Baking Addiction]
Ingredients:
1 cup pumpkin puree
1/2 cup white sugar
1/2 cup medium brown sugar [but any brown sugar will work]
1/2 cup vegetable oil
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla extract
1 cup butterscotch chips

Method:
1. Combine pumpkin, sugar, vegetable oil, and egg.
2. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt.
3. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well.
4. Add vanilla and chocolate chips.
5. Drop by spoonful on a baking sheet lined with parchment paper and bake at 350 degrees F (175 degrees C) for approximately 10 minutes or until lightly brown and firm.

This pumpkin swirl brownie was a nice addition to the mix for my boyfriend. It was something different not not completely out of the ordinary. These were really the prettiest brownies in the mix. The swirl of pumpkin gave it something different. It was lovely to make.

November Baking GALS

For this month's Baking GALS, I had decided to bake by myself instead of with Circle K since its been a crazy couple of weeks doing so. In addition, they needed to be sent out by the 14th and last weekend was my crazyyyyy fun FTC weekend and this weekend, well it would be too late. But this weekend is masquerade ball.

So Vetern's Day, day off of class, I decided to take my time and start baking. In the morning, I trekked the mile or so to go and shop at safeway. This was my change to try and bake all day and see if that was possible. I think I started baking around 12pm and didnt finish until about 6pm the same day. Even while baking, I think I may have tried to fall asleep since I was so tired of everything.

So here are the pictures and recipes that I used to bake some of the various yummy things for the soldiers!

Spiced Pumpkin Cookies and [cup]Cakes [sms]

I had the same problem getting the pumpkin, but when I finally did, these were really easy to make.

I feel like the cupcakes were better than the cookies, but all in all, they were really good. I don't really have too much to say since I'm back in Southern California for the weekend, but the cupcakes are up north and actually LONG GONE. haha. I did get a horrible tan this weekend by wearing a spaghetti strapped dress and out in the sun basically from 9-3. STRAIGHT.

Pumpkin Patch [msc]

So the trouble with living in basically two places is that sometimes on amazon you forget to change your shipping address. That's exactly what happened to me. I had shipped my pumpkin puree that I bought online to home, like in Orange County, California, but currently I'm in Northern California for school.

I had a couple of my friends who came up this past weekend bring some up for me and the cans of pumpkin puree are HUGE. 29 oz. It'll be a lot of pumpkin stuff this fall. Cupcakes, cookies, muffins, bread, pie, and whatever else I can think of.

These are were really easy to put together; I had just made 1/4 of the recipe since I know that I just made another pumpkin recipe for Sweet Melissa Sundays.

They were pretty good. This week was just really hard school wise for me. Just a lot of stuff that needs to get done in a short amount of time. I am not really getting the 8 hours suggested, but then again, who does? Back to more homework, club stuff, and sleep later on tonight.
