Fruits of the Forest Pie


I know that I had promised to bake more..and now that I'm moving out of my apartment I am! I had 2 frozen pie crusts and I thought that yesterday was perfect for a pie. 

I had tried to just use the other pie crust as the top crust, but it fell apart on me, so I decided to be a little creative instead. I cut out (using cookie cutters) hearts and made the top crust that way. This way, there were vent holes where the pie could do its thing. 

It was so delicious. We couldn't even stop and get a picture of its inside. The many many different berries made it a great combination. I feel like you could still taste all of them even though they were mixed together. It was still warm about 2 hours later when we finally dug into it and it was gone in 2 minutes. 

Fruits of Forest Pie (adapted from here)
Ingredients:
1 double crust pie crust
2 cups strawberries, cut into small pieces
1 cup blueberries
1 cup raspberries
1 cup blackberry
2/3 cup sugar
1/3 cup flour
1/2 teaspoon cinnamon


Directions:
Preheat oven to 375 degrees.
Ease bottom crust in 9-inch pie pan.
In a large mixing bowl, combine the sugar, flour, and cinnamon. Stir in berries. Gently toss berries until coated. Transfer berry mixture to the pastry-lined pie plate.
Trim bottom pastry to edge of pie plate. Place top crust on filling and fold edge under bottom pastry. Flute edge as desired.  Prick with fork for steam vents. ( I made the top crust by cutting some pie dough into shapes of hearts and decoratively placed them on the pie) 
Bake for 50 minutes, or until top is golden filling is bubbling. Cool on wire rack.

Strawberry Cupcakes [msc]

It's been a while since I've really baked but that's due to the fact that my parents don't really like it when I bake at home. Therefore, I've been baking out of a box. Recently, since I came back up to Berkeley, I'm baking from scratch again. This time I was taking on Martha Stewart's Strawberry Cupcakes.

I had halved the recipe and made about 20. They were delicious, although a bit muffin like as always. In this case, I also subbed the milk for strawberry yogurt. In addition, instead of the buttercream, I decided to make some whipped cream to make it a bit lighter. They were gone very soon and it was delicious!

Strawberry Shortcake Ice Cream Cupcakes

In addition to the previous post about ice cream cupcakes, I've decided to make another ice cream cupcake for the Ice Cream Cupcake contest. I was shopping in the store and I was inspired by the angel food cake mix that I bought. All I needed was to add some water to the. mix.

Easy enough. Baked the cupcakes.

Then add some strawberry sherbet.

Place the top back on.

Then put some strawberries on top...and some whipped cream.

Simple and easy as that. It was quite delicious.

Now I can't stop eating strawberries mixed with a bit of sugar. This isn't good.

Strawberry Muffins [sms]

This week's Sweet Melissa Sundays pick, Orange Blueberry Muffins with Pecan Crumble, was chosen by Chaya of Sweet & Savory. I actually only made strawberry muffins with a sugar topping because two words - FINALS WEEK. Next week is finals so all I've basically been trying to do is sleep, eat, and study.

I made half the recipe and ended up with 8 and used a basket of some farm fresh strawberries from a place near campus for a $1. I also added more butter and cream to make up for the fact that most people found this recipe to be too dry. I also pulled them out at about the 20 minute mark. I have a few left for the next couple of days - NO TIME TO EAT...STUDY STUDY STUDY.

I gave a couple of these to my friend who is also studying lots...like everyone else. So onwards to sleeping and studying!

SORRY for the super short post, but I'm just super tired right now. It's been a crazy day and I just want to sleep and study for the next 4 days for my finals. THEN I'll be [basically] free!

Strawberry Rhubarb Cobbler Pie [sms]

This week's Sweet Melissa Sundays pick, Strawberry Rhubarb Cobbler Pie, was chosen by Tracey of Tracey’s Culinary Adventures. She's always helpful and in two of the same groups I am in!

This was a definite hit with my Circle K friends. They dove in and ate the pie within a couple of minutes. I swear whenever I bring things to the meeting, they are gone in a few minutes.

Instead of using fresh strawberries, I used some fresh strawberries that I had cut up and frozen. They were on sale a couple of weeks ago and I thought that I would not be able to make a grocery trip before making this pie so I decided to go that that route, but also because they were on sale! I also used a frozen pie crust! I KNOW! I just don't have the kind of time to make pies crusts. I'll try harder next time we make a pie crust. In addition to those two, I decided to go with a cocoa topping instead of the biscuits as suggested by Melissa. I had some left over cocoa strudel from my mini cocoa strudel cheesecakes so I decided to top the pie with that strudel.

It was so delicious. The strawberry and chocolate is such a great combination! I hope everyone else enjoyed it as well. I still don't know the exact flavor of rhubarb, but I would definitely make this pie again!

Mango Bread with Cinnamon-Rum-Strawberry Glaze [sms]

This week's Sweet Melissa Sundays pick, Sweet Potato Bread with Cinnamon-Rum-Orange Glaze, was chosen by Lorelei of Mermaid Sweets. I instead made it with Mangoes and Strawberry.

I ended up using canned mangoes found in the grocery store. At first, I thought they tasted a bit weird out of the can, but it tasted fine when it came out of the oven.

I first pureed one can of mangoes and the other can, I chopped up and put it into the batter itself. It gave it two different ways of getting mango.

As for the glaze on top, I made it with strawberry juice and Puerto Rican rum. It was pretty good except for the fact the glaze was kind of too sticky or something. It was great regardless.

I had made this and Thin Mint cupcakes for the Bake sale. The next couple [or a lot] of pictures are from the Bake Sale on Saturday! Enjoy. [we made $1650 for charity!]

Strawberry Lemonade (bars) [sms]

This week's Sweet Melissa Sundays pick, Strawberry Lemonade, was chosen by Jessica of My Baking Heart. Since I had no real use for Strawberry Lemonade, I decided to use this recipe that I had saved that was similar.

I really would have made the lemonade, but I came down some random sickness this past week. I've been sitting at home just sick. Also, next week is my first final, therefore, I should be studying and not blogging. Anyways, back to these bars. They were sweet and tart, but not as pink as the picture from the blog I found it at. Sorry for the lack of pictures, I was in a hurry and only took 3 and that was the only good one.

I brought these bars to an event called Ace of Cakes, which was an event put on by Circle K, here in Berkeley. It's a place where organizations make cakes and try to get as many tickets as possible. I took pictures of almost every one of them. I'll try to link the club website as much as I can!

Strawberry Cupcakes with Kiwi Frosting and Rice Krispies Sushi

So one of my friends, Kat, who I just met a couple week ago. She's apparently part of the Circle K at her school which makes all friends! Anyways, so she's leaving for Alabama for ICON (International Convention) and then she's going back to Ohio. =[. It was great hanging out with her and everything. So Friday night, before she leave, good bye dinner - at Minami Sushi. Seriously, we get sushi from there all the time. Only 8 bucks for sushi. YUMMY

Anyways, being that it is HER going away party, I asked her what type of cupcakes she wanted. She said that she loves strawberries and likes kiwi too, so I decided to look at my list of things that I wanted to make, and there it was - Strawberry Cupcakes and Kiwi Frosting. (8 out of 10!)

These were very simple to make even with strawberry yogurt. I had subbed out the yogurt for half a cup of buttermilk and half a cup of sour cream. I also added a little more than a cup of strawberries. It was really good. The frosting was easy enough to make.

I also created some rice krispies sushi for her. They are so cute and really simple to make. She knows that she doesnt get really nice sushi when she goes back to Ohio, so this is an homage to that.
