Coconut Pecan Frosting with Devils Food Cupcakes [sms]

This week's Sweet Melissa Sundays pick, Coconut Pecan Frosting, was chosen by a great friend, Eliana of A Chica Bakes.

I remember when I was travelling to New York, Eliana gave me some great tips and pointers for going there. I'm super sorry that we were not able to meet up anything, but I'll be back in New York in March with my best friend for Spring Break. We'll be partying it up and eating some delicious foods.

I do want to apologize to everyone for not posting for a while. School and recruiting has been taking over my life lately, but I have some extra time this weekend because I don't have midterms until next week. I had a date this weekend, one of many since my ex and I broke up. He decided to cook me dinner while I made him these cupcakes with this topping. He loved it. I made the Devil's Food cupcakes from a mix, but doctored it up. I used this recipe for Chocolate Rum Cake because I had some Malibu lying around...well because my friend Elan is awesome and bought me some when I was super depressed.

Anyways, back to my blog, I've been trying to get myself back into baking, and I'll attempt to make something weekly. Wish me luck!

Apple Orchard Pecan Crumble [sms]

This week has been kinda killer. Midterms have started so very little sleep and no one to feed meant that I have no idea what to do.

I decided to make this crumble into a mini version. Also, I had double the crumble. SO YUMMY! Cupcake liners FTW!

Banana Pecan Cupcakes [bonus msc]

When I had gotten the post on my google reader about a BONUS ROUND for the cupcake club, I knew that I wanted to participate. I had to think what the perfect occasion to actually make these cupcakes, and my friend's housewarming party was it. I had made the root beer float cupcakes, but there just weren't enough for the 50 people expected at the party. I decided to make more cupcakes. That's how I tend to solve all problems. Cupcakes are the answer.

So I decided to mix all the ingredients together, but I ran into a problem - minor of course. I know that I was supposed to put the pecans in the batter itself, but I didn't feel like mixing anymore and I had already started to fill the cupcake liners up, so I ended up just adding the pecans in afterwards towards the middle of the cupcake hoping that it'll somehow end up in the center of the cupcake.

That, of course, didn't exactly work out as planned, but the pecans were there.

For the frosting, I decided to halve the caramel buttercream recipe because that would have been quite a lot of butter and eggs to work with, but it was the right amount for me. I somehow ended up with 50something cupcakes and I just piped a little bit of frosting on each cupcake and I used it all up.

This was quite a fun recipe to do and I really enjoyed it. They tasted super good too. It was like creamy frosting with some nuts and some good banana cupcakes. It was just a really good recipe and I enjoyed it.

Turtle Cupcakes

These turtle cupcakes were made for a friend of mine who is leaving for Saipan.

One of his favorite things is turtles so I decided to make him turtle cupcakes - even though they aren't turtles, it's in the name. He also loves the Lakers and Kobe. So in honor of Kobe's old number - 8 - I decided to use the sugar ball thingies that I bought a while ago and use 8 of them. It was a great thing because even if people didn't realize it, I knew it. =]

As for the recipe - I had it but now I can't find it anymore. SORRY! But I did write down the ingredients for the cupcake part.
Ingredients:
1 egg
2/3 cup of vegetable oil
1 cup of buttermilk
1 teaspoon of vanilla extract
2 cups of flour
1 3/4 cups of sugar
1/2 cup of cocoa
1 teaspoon of salt
1 tablespoon of baking soda
1 cup of hot coffee
Directions:
Preheat oven at 350 degrees. Line cupcake pan with cupcake liners.
Mix the egg, vegetable oil, buttermilk and vanilla extract together.
Combine the flour, sugar, cocoa, salt, and baking soda together in a large bowl.
Stir the wet ingredients into the dry ingredients.
Pour in the hot coffee and stir until fully mixed.
Pour into your cupcake liners and bake for 15 mins or so.

I had used my buttercream from the dobos torte so I didnt have to make anymore. I had cut a v-shape well into my cupcakes to fill it with caramel and pecans. I finished the cupcakes with some sprinkles.
