Chocolate Walnut Brownies [sms]

They were super delicious and fudgy. I really enjoyed them and so did my friend who came from Southern California to visit for her orientation here at Cal. We certainly had fun while visiting SF.

Pecan Shortbread Cookies [sms...err smw]

This week's Sweet Melissa Sundays pick, Pecan Shortbread Cookies, was chosen by Lara of The Lab.

Okay, I know its Wednesday and not Sunday anymore, but I promise I have a good reason to why this didn't get made until Sunday.

First, I wanted to make them Saturday, but my roommate had a birthday party that lasted until about 12 and I didn't feel like baking that night
.
So Sunday, I make the cheesecake bars, but then I realized that I didn't have the coconut needed for the topping for the bars. Being lazy, I actually never got to that part, but I hope you enjoy my cheesecake bars and I will make those girl scout cookie cheese cake bars eventually! I promise!

I made these with walnuts instead of pecans...well because that's all the nuts I had here! I hope my roommates and friends at Circle K enjoyed them!

Roasted Walnut Cake with Guava Caramel FAIL [sms]

This week's Sweet Melissa Sundays pick, Roasted Pecan Cake with Caramel Orange Marmalade and Burnt Orange Buttercream, was chosen by Leslie of Lethally Delicious.

This would have been a delicious recipe, if it was actually finished. I had made the cake with walnuts...and not crushed because I have no food processor, so whole chopped pieces of walnuts. The cake turned out fine. Also, I had made the caramel part of the orange marmalade and and splashed some guava juice in it instead.

The frosting is where it went all wrong. Somehow nothing went right. The guava juice wasn't becoming syrupy enough. The sugar was too soft. The butter was too cold. The frosting was just a huge failure, but not only that, the whole job searching thing is hard. I've sent out about 20 resumes, and no responses at all - not even a no thank you. It's getting to me, but I'm still looking for stuff. If anyone knows of something I can in the Bay area, or in the LA area, please let me know. I think that any job right now would be appreciated.

Also during this week, I have decided that I do want to start my own business - a cupcake business. Maybe mini tarts too! Name has yet to be decided, and it'll probably be order only for now. Maybe I'll do a storefront. I'll think about it all during this month! I'll decide before everything's done.

Sorry, Leslie, they just turned out so bad that I just didnt want to photograph them. Hopefully everyone else's faired a lot better than mine!

Lemon Walnut-Sour Cream Pound (cup)Cake [sms]

Back to this though, these cupcakes were very good, but not particularly lemonly without the sauce on top. The lemon sauce which was equal parts lemon juice and sugar was a concentrated lemon taste that was really good. I had brought a couple along with me to a dinner with friends that I rarely see, but then two of the girls had decided to cancel. Instead, I brought it with me to the dinner still that I had planned but it was just a dinner between one high school friend and I. Also, I brought these with me on my flight back up north. School's finally starting and I'll be busy busy busy again. Hopefully I will be able to bake as much as I do now, but that is probably unlikely.

Look out for the next couple of weeks - I plan on making 21 different chocolate things in honor of my boyfriend's birthday who is turning 21 and for the Kiwanis Takeover [themed Mardi Gras]. I will try to start posting these Monday, in hopes that since he doesn't read my blog consistently, he won't read it now before he gets the package!
