Peanut Butter Butterscotch Cookies

So when I get super stressed out at work and don't want do anything except bake, I sometimes go looking for recipes. I know it's not the best thing to do, but 15 minutes and I'm back to work and much more concentrated. With stresses coming up soon with a whole bunch of deadlines, there will be a lot more baking on, unless I start having 12+ hour days again. Then it's just sleep when I get to my apartment.

Anyways, I promised that I would help a friend in any way that I could. Farah is a friend from high school. We met in sophomore year and to be honest we've never been super great friends, but we've always been there for the other person. We went to different colleges and have grown into our own. She has decided to be a producer for a great documentary coming out soon. I know this may mean nothing to you, but being an Asian American, I can see that her documentary meaning a lot to people who are in the same boat as I am.

I made some brownies and decided to decorate one with her logo, to the best of my abilities. It didn't turn out so well, but I'll do better next time. Actually, next time I would make sugar cookies and decorate using royal icing. Back to the cookies, they were super delicious. They were like peanut butter cookies and I added some butterscotch chips. The added chips gave the cookies a great dimension that I didn't think would be amazing.

Recipe:
(adapted from here)
1/2 cup sugar
1/2 cup firmly packed brown sugar
1/2 cup unsalted butter, room temperature
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
1 egg
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup (6-ounce package) butterscotch morsels


Directions:
Preheat oven to 375 degrees F.
In a large bowl, combine sugar, brown sugar and butter. Beat with an electric hand mixer until fluffy.
Add the peanut butter, vanilla and egg, blend well. Add the flour, baking soda and salt to dough mixture and mix well.
With a wooden spoon or rubber spatula, stir in butterscotch chips. Take a tablespoon of dough and shape, with your hands.
Flatten the balls lightly with the fork in a crisscross pattern (like you would with a peanut butter cookie).
Bake cookies for 10-12 minutes, or until golden brown. Remove cookies from cookie sheet immediately and place on wire racks to cool thoroughly.

Peanut Butter Truffles [sms]

This week's Sweet Melissa Sundays pick, Peanut Butter Truffles, was chosen by Mara of Love Your Mother Earth.

I had actually made these late Friday night, I just never got around to photographing it and getting to it until today because it's been a super busy weekend. I'm really sorry that I don't have more pictures, but I'll make it up by giving you pictures of what happened this weekend!

First, Friday night was UC Berkeley Circle K Banquet. As many of the constant readers of my blog know, it's a community service organization that I am a part of on campus. Therefore - banquet season! It was about 5 hours of eating, writing notes to people and other amazing things that I can't particularly think of.

Saturday was spent in Davis for something called Spring Training Conference. Therefore, lots of helping out, setting up, and just basically helping the person in charge running the event as smoothly as possible.

Old District Board

Sunday was spent going to various stores and buying stuff for the last family social on Tuesday and also Wong Fu Productions showcase. For those who don't know what Wong Fu is, it's 3 guys who started a video making production company that shoots a lot of short videos to put on youtube. They've recently worked with AJ Rafael, David Choi, and KevJumba [Youtube Celebs]. So yes, we got to see a couple of their more recent, unreleased works...WHICH WAS AMAZING.

I actually meant to give these to them, but I decided instead to make them brownie cupcakes which were amazing!

Reese's Brownies

Here, this Reese's Brownie, is another version of the combination of peanut butter and chocolate. Its just a brownie with a peanut butter and chocolate ganche topping, but added bonus, chopped Reese's all over the top. It wonderfully peanut butter-y and chocolate-y.

These Peanut Butter Chocolate Chip Cookies were amazing. The combination of peanut butter and chocolate is always a great one and this is no exception. Delicious! Even my roommate who hates peanut butter loves this cookie!

Peanut Butter Pie with Chocolate Pie Crust [sms]

This week's Sweet Melissa Sundays pick, Chocolate Pie Crust, was chosen by Donna of L’Amour de Tarte.

We had an opportunity to choose what we wanted for the center and since I had this bookmarked for the longest time to make, I decided to take the chance and make this peanut butter pie. Although it calls for fudge on the bottom, I decided to skip that part because the crust was already chocolate flavored. Because of that, I made half of the fudge layer for the drizzle on top. I also made this into a tart pan, well because it would just be prettier and easier.

I bought it with me to my trip to UCLA this past week and it was a crazy week this week.

Monday, UCSD - Circle K meeting and food.
Tuesday, UCI - Circle K meeting and more food. Chipotle
Wednesday, Avatar 3D with my friend and crepes and starbucks. Gossip and talking haha.
Thursday, UCLA - Circle K meeting and a frat rush party. I ended up taking care of a drunk girl. Ahh oh well - I guess that's the perk of being sober.
Friday, relaxing because it's been a crazy busy week.

Devils Food [cup]Cake with Peanut Butter [and Nutella] Frosting [sms]

This week's SMS, Devils Food Cake with Peanut Butter Frosting, was chosen by Holly of Phe/mom/enon.

This recipe was so amazing. It was pretty easy to whip up - at 10pm for the next day. I had made these and brought these to the event last weekend down in Southern California. I put them in nice boxes and in the car with me the whole time.

I had topped these cupcakes with both a peanut butter frosting as suggested by the book and a nutella frosting.
I just made half of the frosting and 1/4 of it, I put peanut butter in until I felt like it was spreadable and pipable and same with the nutella with the other 3/4. It was pretty easy to make and super sugary and yummy!

The nutella ones I just piped and put sprinkles on. Simple is often best.

The peanut butter ones, I decided to go crazy with. I had promised my friend these Mouse in the House Cupcakes which was just a cute way to decorate cupcakes, so I made them that way. Super simple and super fun!

I think regardless of the decorating technique, both were successes. I really enjoyed this week's SMS and baked them super early meaning that I have more time to bake other things. [aka use up the pumpkin puree that I have]

Chewy Peanut Butter Cookies [sms]

So I decided to tackle this as I normally do, on Tuesday nights before the Circle K meeting on Wednesday. This week's SMS was chosen by Stephanie of Ice Cream Before Dinner. The funny thing is that she is actually the one that got me into sms. I was following her blog on google reader, and she had this new thing that she was in. I knew that a lot of people were into TWD (Tuesdays with Dorie), but I saw that she was in something new and they were still accepting members so that's when I joined. I've loved everything so far. It's been a challenge, but in a good way.

Anyways, these peanut butter cookies were easy. I had doubled the recipe because I knew that I wanted both peanut butter cookies without chocolate chips, but since I love chocolate chips, I decided to do a batch with some.

Whilst making the recipe, I decided to add two pinches of cinnamon and two dashes of vanilla which would equal out to one of each per recipe.

I don't think it had made too much of a difference, but they definitely smelled really good. My crosshatch didn't work out as much as I had hoped, but that's okay.

The chocolate chip ones were the friend favorite since those were gone in like 10 minutes. I had made my two into an ice cream sandwich.
