S'more Cupcakes [msc]

These S'more cupcakes were easy to make and super yummy.

Mine were a little on the dry side, but since I added extra chocolate and marshmallows, it seemed okay. I had filled mine with extra chocolate. and added marshmallows on top. Now, that I've sat down for a while, I could have filled mine with the marshmallows and chocolate and then topped them again. That would have been creative.

I realize that I always run out of time before going to parties with my friends and finish my cupcakes almost always last minute.

Last time I made s'more cupcakes, it was a completely different recipe and those who tried both had their differing opinions, but that always happens.

S'mores Bar

So being at home means less baking. EEK! But I had time to make these s'mores bars. There was a potluck for UCLA Circle K and I decided to bake for it, even though we didn't need to bring food. Regardless, I knew my two friends, Andy and Jaymie wanted me to bring things for them. So I baked these S'mores bars. I'm not sure if the recipe can be seen without a LJ account so I'll repost it here.

Recipe:
Ingredients:
1/2 cup butter, room temperature
1/4 cup brown sugar
1/2 cup sugar
1 large egg
1 tsp vanilla extract
1 1/3 cups all purpose flour
3/4 cup graham cracker crumbs
1 tsp baking powder
1/4 tsp salt
4 regular sized milk chocl (e.g. Hershey’s)
1 1/2 cups marshmallow creme/fluff (not melted marshmallows)
Directions:
Preheat oven to 350°F.
Grease an 8-inch square baking pan.
In a large bowl, cream together butter and sugar until light.
Beat in egg and vanilla.
In a small bowl, whisk together flour, graham cracker crumbs, baking powder and salt.
Add to butter mixture and mix at a low speed until combined.
Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan.
Spread chocolate with marshmallow creme or fluff.
Place chocolate bars over dough. Break them up to small pieces to fit them better.
Place remaining dough in a single layer on top of the chocolate bars (most easily achieved by flattening the dough into small shingles and laying them together).
Bake for 30 to 35 minutes, until lightly browned.
Cool completely before cutting into bars.

S'mores Cupcake

So many things to bake, and so little time.
To be time efficient, I decided to bake these cupcakes a day before the baby shower, but then the baby was born today, and the baby shower tomorrow? So no baby shower, but now I'm left with cupcakes.
Oh well, these cupcakes came out amazing though. <3>
I, obviously, was inspired by this.


Cupcake portion:
Ingredients:
1 ½ cups of graham cracker crumbs
½ cup of flour
2 ½ teaspoons of baking powder
½ cup of butter, softened
¾ cup of sugar
2 eggs
2 teaspoon of vanilla
¾ cup of soy milk
12 oz bag of chocolate chips

Directions:
In a small bowl combine the crumbs, flour and baking powder; set aside.
Beat the butter and the sugar in the bowl of an electric mixer until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Add the vanilla.
Alternately add flour mixture with milk, beating well after each addition.
Add in chocolate chips and mix well.
Divide the batter into two muffin tins lined with 22 cupcake liners total.
Bake at 350F degrees for 22-25 minutes or until done.
Cool in pans for 5 minutes.
Remove from pans and cool completely on a wire rack.

Frosting:
Ingredients:
1/2 lb. (2 sticks) butter, room temperature
1 cup confectioner's sugar
2 tsp. vanilla
7 oz. tub of marshmallow cream, 2 of them
Directions:
Cream the butter on high until it's light and fluffy.
Add the confectioner's sugar, 1/4 cup at a time, and beat until fluffy each time.
Beat in the vanilla until incorporated.
Then dump in the Fluff and mix it up 'til it's all creamy.
Transfer to pastry bag and pipe onto cupcakes!
Garnish with graham crackers and Hershey's chocolate.
