Mini Egg Cookies
Reeses Pieces Cookies
Mini Egg Cookies:
Ingredients:
2/3 cup melted butter
2 cups lightly packed brown sugar
2 eggs
2 tablespoons hot water
1 teaspoon vanilla extract
2 2/3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 large package cadbury mini eggs

Directions:
Heat oven to 375°F (190°C).
In large bowl, beat melted butter, brown sugar, eggs, hot water and vanilla extract until smooth.
In medium bowl, mix together flour, baking powder and baking soda. Stir into butter mixture until blended.
Coarsely chop 1/2 of the package of mini eggs, then stir into the dough mixture. Drop from small teaspoon onto ungreased cookie sheet. Garnish the top of each cookie with one mini egg.
Bake 8 to 10 minutes. Let cool 1 minute; remove to wire rack.

Reeses Pieces Cookies:
Ingredients::
1 1/4 C All purpose Flour
1/2 tsp salt
1/4 tsp baking soda
7 tbsp unsalted butter, softened
1/2 C granulated sugar
1 large egg, room temp
1 tsp vanilla
3 tablespoons sour cream
some miniature reese's peanut butter cups, frozen and choppedrecipes from here and here

Cranberry Oatmeal Cookies


For Farah Cho.
She's the one afterall, who I made these for.
Ingredients:
1 cup butter, softened
1 cup packed brown sugar
1 cup white sugar
2 eggs
2 teaspoon vanilla extract
2.5 cups quick cooking oats
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
2 cup dried cranberries

Directions:
Beat butter, sugars, eggs and vanilla for 5 minutes. (Don't skimp on the 5 minutes, just use your electric hand mixer and whip in some air)
In another bowl, combine oats, flour, baking soda, baking powder, and salt.
Add the dry ingredients to butter mixture 1 cup at a time.

Mix in craisins.
Drop by spoonfuls onto greased cookie sheets and bake for 12-14 minutes at 350 degrees F (175 degrees C).
And they turn into yummy cranberry oatmeal cookies!

Espresso Cupcakes with Chocolate Frosting

So today, I have two friends who have their end of the year parties. I decided to bake them something special. One of them has been there for me when I wanted to start a new project for Circle K - Baking for Soldiers, and the other was my biggest supporter through my whole baking experience. This was my way of thanking them. I know one of them loves coffee - therefore the espresso part, but who doesn't love chocolate right?

Cupcake part!
Ingredients:
3/4 cup canola oil
3/4 cup packed brown sugar
3 large eggs
1 cup + 2 tablespoons self-rising cake flour
1 tablespoon + 2 teaspoons of cocoa powder
1 tablespoon + 2 teaspoons of espresso coffee powder
3 ounces bittersweet chocolate, melted
3 tablespoons milk
Preheat the oven to 400 degrees.

Mix the oil and sugar together until somewhat creamy. Then add eggs and pulse using your electric mixer. Add the flour, cocoa, and coffee powder and mix until smooth. Finally add the chocolate and milk.
I used two tablespoons for each cupcake, but I would suggest using a little less.
Cook for 15-20 minutes, or until the toothpick comes out clean.
Let cool in the pan.

Finished cupcake!


Frosting:
Can of Duncan Hines Chocolate whipped frosting
Some milk or heavy whipping cream

Mix together until pipeable.

To put everything together
Cut the tops off because they make a great tasting and its easier to pipe on flat surfaces.
Pipe using whatever tip you want to.
Then use the tops (if you want) and crumble them for the something extra on top.

You can eat the extra tops, or give them to the people who don't get all the cupcakes
