Chocolate Cream Caramels [sms]

This week's Sweet Melissa Sundays pick, Chocolate Cream Caramels, was chosen by Jeanette of The Whimsical Cupcake.

I was attempting these caramels without a thermometer - I had read up on all the articles I could and watched all the youtube videos. Still, I apparently let it sit on the stove for too long and the caramels were hard. Too hard to even really eat. A failed batch for me; perhaps, I'll get back to it someday and make them successfully!

I do have some resolutions for this new year regarding my life and my blog. I've come a long way since then, but I've got lots more to do this next year!

My New Years Resolutions:
- Bake more often, and with that, post more often. Hopefully it'll be once every two days or so.
- Eat as healthy as possible. More vegetables and less sweets!
- Job searching! Hopefully either I'll find a job or an internship for this summer.
- Sleep by 1, up by 8!
- Pictures, pictures, pictures! Document my everyday life for me and everyone around me.
- Be nicer. I know that I have an attitude sometimes, and I will try to tone that down.
- Relationships. Friendships. Build those.
- Thank the little things in life.

If anyone has any suggestions for the blog, please let me know so I can improve on those for you!

Recipe for the caramels here! Make sure to check out the rest of the SMS bakers on the blogroll.

  1. Hi, Nina: Happy New Year! Making candy without a candy thermometer is really tough. I gave up and bought one a few years ago. Your caramels look beautiful, regardless. You should try these again sometime, they are yummy.

  2. Hey at least you tired..maybe next time with a candy thermometer!
I like your new years res. I think it's cute you wrote bake more but eat less sweets!! You'll have to give them all away!
    Happy New Year!

  3. Wow, kudos to you for trying to make them without a candy thermometer. I don't think I'm that brave! They look wonderful even if they were a bit too hard to eat.

Happy New Year and good luck with your resolutions.

  4. Happy New Year Nina! Sorry your caramels were hard, but kudos for giving it a go without a thermometer! You are much braver than I!

  5. I'm glad you tried anyway. I highly recommend getting a thermometer and trying these. They're really good.

  6. The caramels still look good! I'm impressed you tried without a candy thermometer. I have one and I'm always burning candy. Happy New Year!

  7. Happy New Year! At least you attempted to make the caramels w/o a thermometer. Good job! too bad they were too hard.

  8. Happy New Year! I give you props for trying this without a thermometer. My mom and my grandmother make candy without a thermometer, but I feel lost without mine (and even then it doesn't usually work for me!). Your harder version reminds me of the See's lollipops that I used to love when I was little.

  9. Happy New Year Nina! Sorry your caramels didn't turn out!

  10. You tried and that is what counts; it is difficult without a thermometer. I never did get the hang of dropping the syrup into a glass of water. Take care and Happy New Year.

  11. Hi Nina!

How are you? I hope you had a wonderful holiday season and a very happy New Year! I'm sorry your SMS caramels didn't come out as planned- even WITH a thermometer, caramels can certainly be finicky. But I'm sure your next batch of caramels will be utterly delicious- just like all of your other creations :)

I'm really looking forward to another fabulous year of baking and blogging together in 2010! Hope you're doing well- have a great week and I'll talk to you soon!

  12. Great resolutions Nina. Looking forward to more of your great posts in this new year.

  13. Too bad about the caramels. Those are some great resolutions though! I share many of them.

Thanks for your comments!
<3 Nina
