Honey Mango Pie

So this one time, my friends and I were talking about pies and one friend said that he likes a mango pie. Although he's never had one, he thought that it would be nice.

I decided that it would be nice to try a mango pie for a Vietnamese food night since it would be interesting and I've never made that before, but also because it would kind of follow the theme - Vietnamese like mangoes, I think. Anyways, I brought it and it was a hit at the party.

Honey Mango Pie
Ingredients:
pie crust [I bought one]
4 mangoes
14 oz [1 can] sweetened condensed milk
3 eggs
1/2 cup honey
1 Tablespoon of vanilla extract
Directions:
Prebake crust at 350 degrees F for about 15 minutes.
Peel, pit, and puree the mangoes with the rest of ingredients.
Pour into crust. I had a bit extra; I placed it in a ramekin and made a pudding.
Bake it at 350 degrees F for about an hour.
Place a baking sheet underneath just in case it poofs up too much and makes a mess in the oven.

Mango Bread with Cinnamon-Rum-Strawberry Glaze [sms]

This week's Sweet Melissa Sundays pick, Sweet Potato Bread with Cinnamon-Rum-Orange Glaze, was chosen by Lorelei of Mermaid Sweets. I instead made it with Mangoes and Strawberry.

I ended up using canned mangoes found in the grocery store. At first, I thought they tasted a bit weird out of the can, but it tasted fine when it came out of the oven.

I first pureed one can of mangoes and the other can, I chopped up and put it into the batter itself. It gave it two different ways of getting mango.

As for the glaze on top, I made it with strawberry juice and Puerto Rican rum. It was pretty good except for the fact the glaze was kind of too sticky or something. It was great regardless.

I had made this and Thin Mint cupcakes for the Bake sale. The next couple [or a lot] of pictures are from the Bake Sale on Saturday! Enjoy. [we made $1650 for charity!]

Mango Cupcakes

These mango cupcakes were on my to do list since my friend Maverick wanted me to make them for him. Since I was not able to see him during the summer when I was at home in Brea, I decided to make these for Mimi. The last post was about her midnight surprise, but this one is for her surprise birthday party. Although I did not have to bake for both of them, I like to bake so I decided to do so and it's the summer, and my one of my classes had gotten canceled, so it was perfect. These were really simple to make. [Number 9 out of 10!]

Recipe for the cupcake:

Ingredients:
1 1/4 cup self rising flour

1 tsp. baking powder

3/4 cup sugar

1/2 cup butter at room temperature

2 eggs

2 tbsp. milk (if the mixture is a bit dry)

2/3 cup diced mangos or you can use mango pure
e [I used 1/3 c of mango juice from the mango, and then put a piece of mango in the middle of the cupcake]
Directions:
Preheat oven to 350. Line your muffin pan with cupcake liners

Cream the butter and slowly add the sugar and cream until the sugar are dissolved.

Add the egg, one at a time into the mixture and beat well.

In another bowl, measure the flour and the baking powder.

Slowly pour into the wet mixture and mix well. Then add the diced mangos

Pour into pan and bake for about 20 min. or depends on your oven temperature.
[Mine took 15 minutes.]

Recipe for the mango buttercream:

Ingredients:
1/2 cup butter, softened
1/2 cup mango puree
Zest and juice of 1 lime [I subbed it with 2 Tablespoons of OJ]
2 tablespoons honey (any mild-flavored honey will do)
4-5 cups of powdered sugar
Directions:
In a mixing bowl, cream butter until light and fluffy.
Add mango puree, zest and juice (or OJ) and honey. Mix well.
Add powdered sugar, 1 cup at a time, until desired spreading consistency is reached.
